IFCA（国際食学協会）では、2005年の食育基本法成立に伴い、消費者志向でのさまざまな角度から調査・研究を行った結果「食育」を普及するためのキーワード、及び食文化・食の理論における知恵・学問・学術の総称を表す言葉として「食学」を定めました。 本講座では、「食学」の基礎となる「身土不二論」や「陰陽調和論」から、「食材や調味料・道具のいろは」まで、知っておくべき基本を習得し、「食学」の基礎となる知識や考え方を身につけます。
